TUA Clean Eats – Clean Carrot Cake


Clean Carrot Cake

This is the perfect way to step into Fall – A delicious yummy recipe, by our TUA Contributor Clara Rienhoff: Figure competitor, Foodie, and fitness enthusiast.


1 C whole wheat flour
1 C coconut flour
2 eggs
4 egg whites
1/2 C stevia
3/4 C applesauce
3 C grated carrots
2 tsp cinnamon
1 1/2 tsp baking powder & baking soda
2 C chopped walnuts

Combine wet & dry ingredients separately. Stir/mix in fully. Stir in walnuts. ((MIGHT have to add in a splash of almond milk & EW alternating until spreadable consistency.))

Protein "Cream Cheese" Icing

2 scoops vanilla whey
Splash almond milk
8 oz Tofutti cream cheese (softened)
1/2-3/4 C plain Greek yogurt
1 tsp vanilla & almond milk
2 tsp cinnamon

Combine. Refrigerate until cake is finished baking. Spread!!
